Description

Free yourself from recipes! The best-selling cookbook, Ratio: The Simple Codes Behind the Craft of Everyday Cooking, by me, Michael Ruhlman, is now an iPhone app that will help you calculate amounts of ingredients in all the fundamental culinary preparations. When you know a ratio, you don’t know a recipe, you know 1,000. And this application does all the calculating for you.
“Cooking, like so many other creative endeavors is defined by relationships. For instance, knowing exactly how much flour to put into a loaf of bread isn’t nearly as useful as understanding the relationship between the flour and the water, or fat, or salt. That relationship is defined by a ‘ratio’ and having a ratio in hand is like having a secret decoder ring that frees you from the tyranny of recipes. ….Michael Ruhlman, in handing us mortals a power better suited to the gods, has changed the balance of kitchen power forever.” —Good Eats host Alton Brown
What You Get:
--THE 32 CRITICAL RATIOS that form the backbone of the culinary arts, with instructions: doughs, batters, meat preparations, custards, sauces (pasta dough and pizza dough, sponge cake and pancakes, fritters and crepes, stocks and sauces, crème caramel and chocolate sauce.
--A CALCULATOR that figures out how much of each ingredient you need, no matter how many or how few people you want to serve.
--An OUNCES-TO-GRAMS CONVERTER (ratios work no matter what unit you choose to use!).
--DELICIOUS VARIATIONS FOR RECIPES on all the ratios, ideas for the creation of new dishes according to your tastes.
--An easy way to STORE YOUR OWN RECIPES and notes that you’ve created from the basic ratios.
--Quick fun ways to SHARE what your cooking with your fellow cooks, on Facebook and on Twitter.
--Ratios is also a great way to understand and TWEAK YOUR OWN RECIPES, to help you make your pancakes even fluffier, your pizza dough crisper, your crème brulee richer.

Loved the book

Nice app that has the book published ratios. Very convenient

Very little here here

Five dollars? You could fit the information this app contains on a double sided, letter sized sheet of paper with 12 point type. I like the concept and it has its uses. But for $5 I'd like to see how these ratios adapt to different dietary requirements, or something a little more encyclopedic in its scope. For one thing, it's extremely French classical in its viewpoint. Wish I'd read the reviews prior to purchasing.

I Agree: Way Overpriced

Very useful but would be satisfied if this app, as it is, were free. I'm tempted to say "where's the beef" but I won't. Disappointed.

Can't really customize

The first thing I wanted to do was to make a ratio for coffee, but "coffee" isn't an ingredient and you can't add custom ingredients. It also kept defaulting me to 20tbs and 12oz instead of 1tbs and 6oz like I kept attempting. Not sure what's going on here but I'm pretty bummed that I spent $6 on this app instead of a latte. ): Maybe the preset ratios will come in handy this weekend for cooking food rather than brewing joe.

Disappointed

Without the ability to save a custom ratio or recipe with anything other than the default value, this app has little value. The concept is great but the QA on the stated functionality gives it one star

Great but photos are interesting

The app itself is awesome. I have used it for years. It seems to function as it always has. The photos in the new version are black and white and I don't believe add to the app. Interesting choice as I think it affects the aesthetics of the app. Function is great. New look not so much.

Very disappointed

"The importance of bug testing." Very disappointed in this app, especially at $4.99. The custom ratios all reset to 1:1:1 and 20 as a unit. Am a big fan of Ruhlman and this is not up to his standard.

Excellent content; Tech is lacking

This is a great app for improvising cooks and those who just want the basic foundation to build one's own recipes on. Plus they finally fixed the discrepancies between the description here, the in-app introduction, and the blurbs for the actual book.
The underlying tech could use some improvement. The primary applications seem to work well: it's a ratio app and it needs to do math and it does. Some extras are a bit off. They finally got around to the iPhone 5 screen, but in early 2014, it really should be fully iPad compatible. The iPad is much better suited for a cooking companion than the iPhone (yes, these are simple formulas that will ultimately be committed to memory, but not immediately), and now that the mini is available there’s a clear middle ground between iPhone and full-sized iPad that should be supported.
The transparent navigation tabs and (to a lesser extent) title bar are a mistake. When text is behind them, the tabs are rendered unreadable. This cannot be intentional as no one would have done this on purpose.
Retina graphics would be nice, too.
Create fully iPad-compatible app and this will be a five-star app. The content is beyond reproach. Ruhlman Enterprises should bring the app up to its level.

The BEST!!

I was an early adopter of this app, & its ratios really work. I was suspicious of this technique, but it's so useful! When you cook for 2, scaling down recipes can be dicey. But having knowledge of amts. of an ingredient when trying to play with a recipe is simple, thanks to this app.
(May be best for those who are used to cooking, rather than newbies.)

Buyer beware

Most of the functionality of this app works well, but please beware - while you can make your own notes on a recipe, the notes are erased once you exit out of the app. Not so great for creating your own recipes. In need of an update. Not worth $5.

Very limited app

Very few recipes and doesn't allow you to add additional ingredients or recipes. It will measure the main ingredients for one of the app's recipes but you're on your own for the measurements beyond those. Over priced for what it does.

Buy the book...

I loaned my book to someone and it disappeared and I thought this app might be a decent substitute. I couldn't recall the oven temp i wanted for a bread recipe and figured it would be in the app, WRONG.
The ratios are fine from what I saw and remember from the book. However, relevant details are missing like oven temps. As I went through the app some more I found it to be disappointing, nothing compared to the book. It is only good for the actual ratio. There are no supplementary recipes, which the book has and I thought might be here.
Connectivity to the blog is still non-functioning and none of the suggestions from previous comments were taken. Save your money, buy the book!

Decent but neglected

This isn't a proper cookbook but for quick on the fly baking tips this app does nicely. Hasn't had a substantial update in ages, iPad version sorely absent.
Haven't had any cooking disasters with any of the ratios, however when baking bread I've referred to proper recipe books. Have had fairly good results with on the fly pound cake, crepes, biscuits and a few others. Overall I'd recommend despite lack of updates and price.

Not worth the price

I loved the book but this app is a rip off.
Not all ratios are represented and you cannot add your own. It says that you can save your own recipe but the ingredients have to stay the same as the ratio it came from. I cannot add a gnocchi recipe ratio for example. This app is worth .99 cents.

Don't worth for your money

I'm doing culinary art right now. I thought this app have tons of important ratios. However, it contains too little ratios for an app, which costs me 4.99$. I recommend to buy a proper cooking book instead. There are more ratios than this little app. Don't buy it. Waste of your value money.

Great concept, would love some more functionality

I love the idea of ratios in cooking and knowing the proper ratio for what you're making is empowering. What would make this app even better is the ability to enter your own ratios for types of recipes that are not included with the app. I'm constantly tweaking my ratios in my own recipes and it would great to be able to use this tool to make subtle adjustments without having to bust out the calculator and a piece of paper.

Not what I thought

This application does not allow you to add your own recipes from scratch. I thought it would take standard ingredients and convert them to ratio recipes. This does not do that. You are stuck with different amounts of the same recipe that came with it.

Would be better if updated for iPad

I like what Michael Ruhlman does, but a little surprised that the last update was Sept 2010 and that he has not yet built in an upgrade for iPad users. I hope existing Ratio users will be able to upgrade when an iPad version is available.

Great concept - needs to be upgrade and expanded. For iPad

LOVE the book. I use it all the time. The app on the iPhone is great when I am at the store and need to figure out what to buy.
It would be much better if they made it to an HD model for the iPad.
Like others said, it would be better if you could get the egg measurements as a per egg, but volumetric measurements are the more professional way to cook.
I would love if they added more recipes from the book too.
If you like the app, you will love the book.

Sugar measurement is wrong and Nonclosing Error window

In the recipes where sugar is included in the ratio, it has 1 cup of sugar weighing 13.2 oz when it should weigh about 7 oz. I also had a problem in the About window when I tried to read blog entries. An error window popped up saying "Ratio can't connect to the internet. You need to be online to read the blog entries". I didn't really understand this since I had internet access on my phone, but the worse part is that the window kept popping up when I hit Ok. I couldn't access the rest of the app, I ended up deleting it from my phone and reinstalling it.

Good App...

I will be a GREAT App when Ratio alowes me to enter my own recipes and save them and back them up to my Desktop. I would be ok with sending my saved recipes to myself via email. Or maybe use iPhones notes that get synced into the "Mail" cliant as a note. Other wise it seams to function fine. Ratio's support seams to be a comments section that can be found with a link on Ratio's website that leads to Michael Ruhlman's site. It would be great if support was obvious!

Thank You!

I just finished reading the book this week an had already been jotting down notes as I went along. I saw this app online and I was thrilled because it's going to save me a ton of time over making my own charts! This app will do nothing for those looking for a recipe book... That's the whole point of his book... With these ratios there's never a recipe required!

Good companion for the book.

Yes, you can write these ratios on notecards, which is what I did prior to getting this ap. But there are a lot of things the IPhone does that can be done on a normal phone, a tab of paper and your laptop, right?
Don't expect miracles from this ap, but if you have read the book, it's nice to have the ratios and basic techniques in one neat spot with a place to jot down recipes you've tried. Without the book, i think this ap would be confusing and uninspiring.
As an ending thought, Everyone deserves a scale. My oxo one cost me 25 bucks and I use it daily. It makes baking so much quicker and cleaner-no more dip and level business, I get irritated baking with measurements now!

Being a culinary student and a fan of the book, I am very satisfied with this app. I was about to go through the process of making flash cards to memorize the ratios, then I found out about the app. WAY better than anything I'd of made. Needing some improvements. PLEASE!

This app has so much potential to be great. First off, tell me the number of eggs I need, not the measurement of egg. Second, I want to put in how many servings of something I want for an estimate of how much I should make. Third, please change the cups measurements so that it isn't in decimals. Change these and you are well on your way to a five star app. Until then, not worth the $4.99 because it's just too difficult to use.

Almost awesome cooking app!!

Love the concept and the pie chart presentation of ingredient proportions. Totally suits my style of cooking, which is to take a recipe and improvise from it. This allows for that so easily: to subsitute one fat for another fat, etc.
Unfortunately, I'm used to measuring ingredients by standard American measuring cups, and seeing ".2 cups" of this to ".8 cups" of that isn't very useful. I know weighing ingredients, especially for baking, is better... but I'm not quite there yet. In any case, I'd say better to eliminate the "cups" unit option than to have decimal equivalents that don't translate quickly to standard fractional measuring cup sizes.

2010-08-01

Good concept, Lazy implementation

The concept behind ratio is good. The implementation...no. An app that isn't backward compatible with previous OS versions or other platforms (iPad) is simply shoddy work, something you'd expect from a novice building a free app, not a paid-for app that Michael Ruhlman is willing to attach his name to.

Since the update for iOS 4 this app has been broken. Changing more than one item (e.g. quantity and units) results in a crash. This makes it basically useless.

Not working on my iPod Touch

Why is this not working on my Touch? It loads fine, but any time I try to change the measure (ounces to grams, or something similar) the app quits and takes me back home. I've sent a note to the support email but no response so far today. I'm bummed and I sincerely hope that there is a fix. I will happily post another review if and when I get this running properly.

Great but crashing on iPhone 4

I got this app after reading the book and I LOVE it. Yes, you could just write the ratios down out of the book, but the app also has a calculator and some details and tips for the different ratios. If they can fix it so that it will stop crashing on my iPhone 4 it'd be great!

2010-06-18

Ok, but tons of potential.

It's an ok app as is, but it would be one of the most used apps on my phone if I could add my own recipes. The "my recipes" tab is currently useless. If I wanted to use the same recipe from Ruhlman's book over and over I'd just write it down, not look it up. Now if I could save my own recipes and use this app to rapidly scale the proportions up and down, THAT would be a 5 star app. Please and thank you.

A good start but needs work

This is a good idea and would be very useful with a few additions. I would like to have a central place to keep notes, the ability to post my own ratios, and most of all the calculator should let you back calculate the amount of ingredients from entering a desired final product volume. I read elsewhere that a revision is ready, but that was weeks ago and here we are with all of these weaknesses uncorrected. Disappointing

Awesome App

This is a very good and functional app. The app is not a waste of time. The instant calculations are fantastic and having the ratios from the book at my finger tips is awesome! I agree with a couple of the other suggestions, but I'd really like to see on the notes is the ability to hit a return key and have the keyboard turn horizontal.

2010-03-25

Missing a critical feature

The app is wonderful... but it doesn't support baker's percentages! I still have to calculate "well, if it's 3 parts flour to 1 part sugar and 2 parts fat, then its uh 100% flour, 33% sugar, and 66% fat, right?" I bought a special scale (on Ruhlman's recommendation!) to weigh ingredients in terms of flour using baker's percentages, but I wish the app would help.

Great, but would love item name on all 3 tabs

I love this app at the concepts behind it. My only issue is that once you select an item and have the three tabs (ratio, calculator, details), the item you're viewing is only displayed on the calculator tab - please add it to the other two as well! I'm intrigued by the idea of user-added ratios for items that aren't represented, as well as notes on tweaked ratios for variations of ones that are already present but I know these are much more advanced requests.

A great follow up to a great book

I've been reading Ruhlman's book, Ratio, wishing there was a simple chart/cheat sheet to the book--low and behold, there's an iphone app. Generally, it's a great app. My only suggestion would be a tab on "variations", similar to what he does with the book--how to "doctor" the basic ratios for slight variations. Nevertheless, if you are looking for a way to improve your cooking skills and "bust out" of the "follow the recipe" trap, I'd highly recommend this app.

excellent app, but...

I was disappointed when I realized that I couldn't add my own ratios. I assumed that's what the "My Recipes" section was for. I hope that feature is coming down the line. Otherwise it's a great resource with an attractive interface that is simple to navigate. I'm sure I'll get my money's worth.

2010-01-11

great start, needs more

A great start and a great interface, but needs far more information to justify its price tag. At the moment, you would be better off searching for a few good ratios and writing them down somewhere in your kitchen and getting a far more packed recipe app for less money. Hopefully this is just the beginning, and we will see more information added as time goes on.

User Ratio's

It would be cool if there was a way for users to submit Ratio's... that way the app might have more use. For example, the ratio of Kaffir/Lemongrass/Galangal (sort of a Thai Mirpoix) in a Thai soup, such as Tom Yum or Tom Kha. Western cuisine isn't the only game in town!
Great app overall! Very useful, would just like to see more Ratio's for international cuisine.

2010-01-07

Very good start

I really like this app (and the book), but I'd like to see more functionality. Tablespoons would be a helpful unit of measurement, especially for things like roux. The app is especially helpful in situations where tools are limited and you might not have access to a scale, and the whole point of a calculator like this is that you don't have to do unit conversions in your head.
I'd also like to see a better integration of additional ingredients for saved recipes. A favorite ratio isn't just the ratio, it's also the ratio that works and possibly skews in combination with the other ingredients.

Great start... Ruhlman, we expect the best!

I agree with much of everyones opinions on the addition of your own ration, the open default screen (ratio vs calculator) for recipes. The ability to back calculate final quantity of output in calculator. I just expected much more from Michael Ruhlman after being such a big fan and follower. Definitely the best cooking info app outthere, put very over priced for the content of the application. Love the book! Dissatisfied with the application. : /

A promising start

I have maintained since laying eyes on the book that it was an app just waiting to happen. The wait is over -- sort of.
While I am happy to have Ruhlman's ratios available to me, I have developed a dozen or more of my own, and I'd like to record those in the app. The app doesn't currently support that. Certainly not a deal breaker, but disappointing. I also think the ratios themselves should be visible in the measurements frame.
It's a good start, and I'm looking forward to future versions.

Very buggy 1.0 release

Unfortunately this release is very buggy. First of all, if you try to launch this app after launching another app then closing it quickly (say if you open another app by mistake), it will not start up. I've had to re-install it already three times. Second, it does not remember any changes to the Settings (which just set the default units (weight or volume) and default measures ("English" or metric)). It always goes back to the defaults, which are Weight and "English". I would say to wait for a bug fix release.

Fantastic idea, very promising!

A brilliant concept, and sure to be with me at all times in the kitchen! There are a few odd things with the UI that nee to be polished up, like blurry text and some ratio diagrams that don't match the listed ratios, but overall it's pretty handy.
It would be nice to be able to organize your own recipes after saving them. Also, to be able to choose which scren you default to for a recipe—ratios, calculator, etc.
It doesn't yet feel polished or feature-rich enough to be worth the price 100%, but im glad I have it.

A handy tool for people who want to bake (or even just cook) more, without having to follow a recipe. This actually teaches you how to cook instead of just telling you what to do. A good companion to the book as well.

Big help in the kitchen. Great reference tool in a easy to use app.

If you like to cook, buy a recipe book. If you really like to cook, read Ratio and then buy this app. You will begin to understand how all of those recipes in the other books work and have the fundamentals to create you own.
Easy to use reference app that is tremendously helpful for the creative cook/chef.

A killer app for the iPhone

I've been waiting for this ever since the book and the execution of the app itseflf exceeds all expectations. Now with only a scale and your phone, you've got the building blocks for almost any cooking method imaginable, including cakes, cookies, sauces, doughs, and breads.
Only thing they didn't figure out yet is how to keep from getting flour all over the device in the kitchen when trying to reread details mid-recipe. Gotta leave something for v2 I guess.

already I'm seeing how this app is going to be indispensable to me. I love the book but this will really spring it into action!

Fantastic!!!

Michael Ruhlman has managed to capture the essence of his wonderful book and provide useful added functionality as well. If you cook, you need this app!
